The seed of a tropical evergreen, with a rich, piney, camphor-like aroma and a nutty, spicy, bittersweet, warm flavor with echoes of clove. Grated fresh, it's a noticeably different spice than the pre-ground version, which fades fast.
Ingredients: Nutmeg.
How to use: Grate what you need on a microplane and put the rest of the seed back in the jar.
Try it in: bechamel, mashed potatoes, spinach, eggnog, custards, pumpkin pie, and sausage.
