Smoked Tea Rub

Lapsang Souchong tea is smoked over pinewood, and that's where the smoke in this rub comes from, not liquid smoke or a smoked salt alone. Molasses and demerara sugar give it a deep sweetness, sesame adds a nutty edge, and rosemary and fennel keep it from going flat.

Ingredients: Hand blended from granulated molasses, sea salt, Lapsang Souchong tea, demerara sugar, sesame seeds, paprika, garlic, black pepper, fennel, rosemary, and marjoram.

Try it on: pork shoulder, duck, chicken, salmon, and roasted root vegetables.
