Santa Maria Seasoning

Three ingredients, and the salt is the star: smoked oak flake salt, coarse and genuinely smoky, with black pepper and garlic doing the rest. This is how they season tri-tip on the central California coast, and it's proof that a good rub doesn't need twelve things in it.
