Everything that makes fresh chorizo taste like chorizo, minus the grinder. Ancho and paprika give it the deep red color and earthy base, garlic and cumin carry the savory side, and cloves, cinnamon, and bay add the warm spice at the back.
Ingredients: Hand blended from ancho, garlic, salt, cumin, coriander, paprika, black pepper, oregano, cloves, bay leaves, thyme, and cinnamon.
How to use: Work it into ground pork and let it rest overnight in the refrigerator before cooking.
Try it on: ground pork, breakfast tacos, queso fundido, potatoes, and eggs.
