Colombo Powder

The curry of the French Caribbean, brought to Guadeloupe and Martinique by Tamil workers in the 1800s. Coriander and turmeric lead, fenugreek and brown mustard add the bitter depth, and ground rice is blended in as a thickener, which is what separates colombo from an Indian curry powder.

Ingredients: Hand blended from coriander, fenugreek, turmeric, brown mustard, black pepper, cumin, cloves, and long grain white rice (as a thickener). Salt-free.

Try it on: chicken, pork, goat, fish, lentils, and squash.
