Cayenne Chile Powder

Clean, direct heat with very little flavor competing with it, which is exactly what makes cayenne pepper useful: it turns up the temperature without changing the taste of the dish. Roughly 30,000 to 50,000 Scoville units.

Ingredients: Cayenne pepper.

Try it in: hot sauce, dry rubs, chili, gumbo, buffalo sauce, eggs, and anywhere a dish needs heat but not more flavor. Start with a pinch.
