Mellow, sweet, and warm with citrusy undertones, and a completely different animal from the fresh leaf, which is cilantro.

How to use: Dry roast the whole seeds in a hot pan for a minute before grinding. It wakes the flavor up considerably.

Ingredients: Coriander seed.

Try it in: curry blends, pickling brines, sausage, roasted vegetables, rubs for pork and lamb, and Belgian-style beer.
