Butterfly Pea Tea

Dried butterfly pea flowers, which brew a startling deep blue. The party trick is real chemistry: add lemon or lime and the acid shifts the pH, turning the cup purple or pink in front of you. Mild and earthy on its own, so it's as much about color as flavor.

Herbal tea | No caffeine | Steep at 212°F for 5 to 10 minutes
