Barbacoa Rub

Barbacoa is Mexican barbecue, and this reads savory where a southern US rub would read sweet. Chipotle and guajillo set the mild-to-medium heat, with cumin, onion, and garlic underneath and a little cinnamon and allspice at the back.

Ingredients: Hand blended from chipotle, guajillo, onion, sea salt, black pepper, garlic, cinnamon, cumin, allspice, Mexican oregano, and cloves.

How to use: About a tablespoon per pound of pork, beef, or chicken.

Try it on: pulled pork, burritos, nachos, tacos, grilled steak, and sandwiches.
