Adobo Lime Rub

Earthy and aromatic, with garlic up front and a faint anise note from the fennel. Lime and the herbs keep it light, which is why it suits fish better than most rubs do.

Ingredients: Hand blended from cumin, garlic, fennel, lime, black pepper, salt, coriander, oregano, rosemary, and thyme.

How to use: A tablespoon per pound of chicken, about half that for fish. Use it dry, or work in a little olive oil to make a paste.

Try it on: chicken, salmon, tilapia, shrimp, and roasted vegetables.
