Flavorful and easy stove top meatballs to serve as an appetizer, on a bed of pasta, or on a sandwich.
Dijon Chicken Meatballs
1 pound lean ground chicken
1/2 cup dry bread crumbs
1 egg, beaten
1 packet Dijon Ranch Dip and Dressing Mix, unprepared
2 Tbls. butter or margarine or oil
1/2 cup chicken broth
Knead together chicken, bread crumbs, egg, and Dip Mix. Roll into 1" balls.
In a large skillet over medium heat, melt butter. Brown meatballs in butter on all sides.
Add broth to skillet, cover, and simmer 10-15 minutes, or until meatballs are cooked through.
