Cajun food is traditionally well spiced, and these wings were no exception, leading to the delicious scents wafting off of them.
We baked the wings first for about 30 to 40 minutes, under the guise of healthier cooking, and then immediately slathered them in four cups of oil for frying. Fried food is always way more delicious than baked food, but we suggest limiting these savory wings to an occasional treat.
Ingredients

4 lbs chicken wings

4 cups oil for frying

3/4 cups vegetable oil

1/4 Cup Cajun Seasoning

2 Tablespoons Salt, seperated

4 oz bleu cheese crumbles

1/2 teaspoon Garlic Powder

1 tsp Worcestershire sauce

1 tsp lemon juice

2 Tbsp fresh parsley, chopped

1 cup sour cream
Directions
In a small bowl, combine sour cream, blue cheese, 1/2 tsp salt, pepper, garlic powder, Worcestershire sauce, lemon juice and parsley and mix well. Cover and refrigerate for at least one hour.
Preheat oven to 375 degrees. On a baking sheet, place wings and bake in oven for 30-35 minutes.
While wings are baking, in a medium bowl, combine vegetable oil, Cajun Seasoning and 1-1/2 Tbsp salt and mix well. This will serarate because of the oil. Make sure to mix well before tossing wings.
In a fryer or Dutch oven, heat 4 cups oil to 375 degrees. Place wings in oil, batch by batch and fry until golden and crispy, about 12-15 minutes.
Drain wings on paper towels and place into large bowl with sauce mixture. Toss wings until they are thoroughly coated.
Serve with bleu cheese dressing and celery and carrot sticks.
