North Carolina BBQ Rub

North Carolina barbecue runs vinegar-forward, and this rub is built to sit under that: brown sugar and Hungarian paprika for the crust, ancho carrying fruity and earthy notes, and just a touch of cayenne heat behind it.

Ingredients: Hand blended from brown sugar, mild chili powder, Hungarian paprika, black pepper, coarse sea salt, cumin, cloves, and cayenne.

Try it on: pork shoulder, pulled pork, ribs, chicken, and smoked turkey.
