Madras Curry

The curry most people picture when they say curry powder, but with more going on than the supermarket version. Coriander and turmeric lead, fenugreek and brown mustard add depth, and red pepper flakes bring a moderate heat. Salt-free.

Ingredients: Hand blended from coriander, turmeric, brown mustard, fenugreek seed, cumin, cinnamon, red pepper flakes, ginger, black pepper, and cardamom.

Try it on: chicken, beef, lentils, rice, cauliflower, and curry night.
