Ground Fenugreek

An intoxicating aroma of butterscotch and sweet nuts over a taste that's nutty and bittersweet, closer to celery seed or lovage. Mild heat, about a 1 or 2 out of 10. Rich in protein, and the backbone of a lot of curry powders.

Ingredients: Ground fenugreek seeds.

Try it in: curry powder, dal, vegetable curries, spice blends, and marinades. Use it sparingly; too much turns bitter.
