Tropical Mango Salsa
Our salsa is a departure from the usual tomato base we see most often, fresh mangos add sweetness and balance the serrano chile peppers and red onion’s heat a little bit (If you’re still concerned about the spicy factor of the chile, you could go with a jalapeno pepper, and even scrape out the pith and seeds to make it super mild).
1 Ripe mango, diced
1 Small red onion, minced
1 Serrano or Jalapeno, membranes removed and seeds removed and minced
1/2 English cucumber, peeled and diced
3 Tbsp Fresh Cilantro, chopped
3 Tbsp Fresh lime juice
1 tsp Lime Pepper
In a bowl, combine all ingredients and mix well.
Cover and refrigerate up to 30 minutes.
