The most expensive spice in the world, and for a reason: each thread is a hand-picked stigma from a crocus flower, and it takes thousands of flowers to make an ounce. The flavor is honeyed and faintly hay-like with a floral, almost metallic edge, and the color it gives is unmistakable.

Ingredients: Spanish saffron threads.

How to use: Steep a pinch of threads in a little warm water, broth, or milk for 10 to 20 minutes, then add the liquid and the threads. A pinch does a whole pot.

Try it in: paella, risotto Milanese, bouillabaisse, saffron rice, and Persian dishes.
